- 45 mls olive oil
- 2 small onions, sliced
- 2 garlic cloves, crushed
- 1 level tbsp sweet paprika
- 1 small dried red chilli, deseeded and finely chopped
- 700 gram(s) (11?2lb) sweet potatoes, peeled and cubed
- 700 gram(s) (11?2lb) pumpkin, peeled and cut into chunks
- 125 gram(s) okra, trimmed
- 500 gram(s) passata
- 400 gram(s) can haricot or cannellini beans, drained

Method
- Heat the oil in a large heavy-based pan, add the onions and garlic and cook over a very gentle heat for 5min.
- Stir in the paprika and chilli and cook for 2min. Add the sweet potatoes, pumpkin, okra, passata and 900ml (11?2 pints) water.
- Season generously with salt and freshly ground black pepper. Cover, bring to the boil and simmer for 20min until the vegetables are tender. Add the beans and cook for 3min to warm through.
