Guacamole

Ever heard of Guacamole( Pronounced Gwaka'mole) it hails from the Aztecs in Mexico later adopted by Americans as a dip or Salad Dressing, main ingredients being avocado while other recipes call for hefty seasoning .

Ingredients

  • Avocados 1 or 2
  • 1 small onion
  • 1 ripe tomato
  • lime/lemon juice
  • Salt and pepper to taste

Directions

  • Mash the peeled and seeded avocado into a bowl
  • Finely chop the onion, tomato and garlic
  • Add in the lime/lemon juice to the onion, tomato and garlic mixture then stir well
  • Take a large bowl then mix the mashed avocado with the onion/tomato/lime concotion
  • Stir in excess lime juice to get the desired taste and texturethen add salt and pepper to taste
And Ahora Guacamole is ready. Easy huh!

Spaghetti with lemon



  • 250 gram(s) spaghetti
  • sea salt and freshly ground black pepper
  • juice of 2 lemons and zest of 1, very finely grated
  • 100 ml olive oil
  • 100 gram(s) Parmesan, freshly grated
  • 1 large handful fresh basil leaves, shredded


Method
  1. Boil the spaghetti in plenty of salted water and, while it is cooking, prepare the sauce.
  2. Whisk half a teaspoon of salt into the lemon juice and when it has dissolved, whisk in the zest and olive oil before gradually beating in the Parmesan. Check the seasoning.
  3. Drain the spaghetti, return it to the pan and add the sauce. Put the pan back on the lowest possible heat and stir in most of the shredded basil. Divide between hot plates and sprinkle with the remaining basil. Recipe by Shona Crawford Poole
