Lemon and mustard chicken


  • 500g new potatoes
  • Juice and zest of lemon
  • 2 tbsp honey
  • 2 tsp freshly chopped rosemary
  • 2 tbsp grain mustard
  • 4 skinless chicken breasts
  • 2 tbsp freshly chopped parsley

Method
  1. Boil the new potatoes for 20 mins or until tender.
  2. While they’re cooking, mix together half the lemon zest and juice, honey, rosemary and mustard. Brush over the chicken breasts and grill for 15-20 mins until cooked through.
  3. Drain the potatoes, crush lightly with wooden spoons and mix the remaining lemon zest, juice, parsley and 2 tsp olive oil. Serve with the chicken.
