- 500g new potatoes
- Juice and zest of lemon
- 2 tbsp honey
- 2 tsp freshly chopped rosemary
- 2 tbsp grain mustard
- 4 skinless chicken breasts
- 2 tbsp freshly chopped parsley
Method
- Boil the new potatoes for 20 mins or until tender.
- While they’re cooking, mix together half the lemon zest and juice, honey, rosemary and mustard. Brush over the chicken breasts and grill for 15-20 mins until cooked through.
- Drain the potatoes, crush lightly with wooden spoons and mix the remaining lemon zest, juice, parsley and 2 tsp olive oil. Serve with the chicken.
